On this page we are preparing some recipes that can used with the exotic meats that we sell, from Frogs Legs to the Camel and Zebra Steaks and what to do with your Diced Kangaroo or Crocodile !

 Crocodile Scampi

 

Ingredients :

1 lb  crocodile tail

2  x  tomatoes, chopped

1  x  garlic clove chopped

1  x  shallot chopped

1  tbl olive oil

3  oz butter

4  tbl  white wine

4  oz mushrooms chopped

Method :

 

  • Slice each fillet into 1/4-inch pieces and pound until double in size. Season with salt and pepper.
  • In a saucepan, heat the butter and the garlic. Saute the meat, add mushrooms, Tomatoes and Sallots.
  • Cook over a low heat until the vegetables are cooked and the meat will be tender.
  • Just before serving add the white wine.

 

serve with a small salad of  spring onions, fresh coriander, mint, parsley, (leaves only) red onion and cucumber with a Chilli & Ginger dressing ( some chilli dipping sauce, water, ginger paste and a dash rice wine vinegar)
